UberEATS: Paninoteca delivers East Coast Flavor with West Coast Style

When Scarpetta’s Executive Chef, Freddy Vargas, set out to make a sandwich shop in the unused kitchen space next to the popular dinner spot, he sought to bring the nostalgic flavors of his hometown Staten Island, to these bustling gardens in Beverly Hills. We sat down with the busy chef to learn more about inspires him and what we can expect from this Los Angeles gem.

What inspired Paninoteca?

I’m born and raised in Staten Island. I went home to New York in January 2014 and had an Italian hero at a local deli and thought “nobody does this in LA.” As a chef everything can be tracked back to where you come from. We wanted to connect people with a good freaking sandwich.

What makes a ‘good freaking sandwich’?

For me it was all about making sure we had the right bread. We spent months searching local bakeries for the right one but we didn’t feel like anything was up to par with what we were trying to do. We wanted that really crunchy bread but soft on the inside and finally our pastry team was able to pull something together and now all of our bread is made in house.

What’s something people don’t know about Paninoteca?

The majority of our ingredients are made in house. The roast beef, the pastrami, the ham, we’re smoking all of these meats ourselves. There’s a lot of love put into each component. The sandwiches are made to order but the ingredients are really made to order.

We’ve featured the Italiano, Padrino, and Meatball Sandwich on EATS. What’s one thing people have to get when they visit your Beverly Hills location?

The chicken ‘parmigiano’. We do our own take on this classic by using a smoked tomato sauce and using burrata cheese. Each layer of flavor in this sandwich is intentional.

What do you want people to feel when they eat Paninoteca? 

I want people to feel happy, content, and excited to come back and try something different. I want to make them a sandwich I would make for myself.

What are some of your LA favorites?

I love Pizzeria Mozza, love SugarFish. Angelini Osteria is great when I want my homemade Italian fix. Honor Bar has one of the best fried chicken sandwiches in the city.

What’s next for Paninoteca?

We have such a great local fan base but are excited to share our food with the rest of LA. Uber has definitely helped us attract more people and been a huge driving part of letting people know we’re here and seeing what we’re doing.
