Talk of the Table: Chi’Lantro BBQ, ATX
Chi’Lantro BBQ started with a simple idea: take traditional comfort food, mix it with Korean BBQ, and serve it out of a food truck.
Five years later, Chi’Lantro is a leader in the Austin culinary scene, along with its founder and main chef, Jae Kim. Chi’Lantro has expanded to two brick and mortar restaurants (with a third on its way this spring) and offers large-scale wedding and event catering.
Originally from Korea, Kim moved to the U.S. when he was eleven years old. Getting into the restaurant business happened by chance for Kim — a Chinese restaurant was the only place that would hire him as a junior in high school.
From there, Kim was hooked. At age 26, he moved to Austin and started Chi’Lantro. Though it is now a much larger operation, Chi’Lantro has stayed true to its beginnings as a simple food truck, and continues to feature signature dishes like Kimchi Fries and Bulgogi Burgers. Chi’Lantro’s storefronts sport a colorful, urban decor, and its food trucks remain a staple at Austin’s many festivals such as ACL Music Festival and South by Southwest.
“Austin is an exciting place for food right now because so many restaurants are opening up,” says Jae. “Chi’Lantro is unique to the city and plays into the ‘Keep Austin Weird’ motto.”
Personally, Kim lives by the motto “Work Hard, Take Risks,” but says the friendliness and passion of his team are what have allowed his restaurant properties to grow.
